Cheez-It Chicken


What You'll Need: 
  • 3 Boneless Skinless Chicken Breasts 
  • 2 Eggs 
  • 1/2 cup of melted Butter or Margarine 
  • 2 1/2 cups of Reduced Fat Cheez-It Crackers (crushed)
  • 2/3 cup of shredded sharp cheddar cheese
  • 1 cup flour
Steps:
  1. Pre-heat the oven to 375 degrees.
  2. Place Cheez-It Crackers and cheese into a ziplock bag, and roll over with a rolling pin until it is crushed into small pieces. Shake the bag until the crumbs and cheese are mixed. 
  3. Place flour into a bowl, set aside. 
  4. Place 2 eggs into a separate bowl and beat; set aside. 
  5. Place cheez-it crumb mixture into a separate bowl, and set aside. 
  6. Dip each chicken breast into the flour, the eggs and then the cheez-it crumbs (in that order).
  7. Set cheez-it covered chicken onto a lightly greased baking dish.
  8. Evenly distribute the melted butter over each chicken breast.
  9. Bake for 40 minutes.
