What You'll Need:
- 3 Boneless Skinless Chicken Breasts
- 2 Eggs
- 1/2 cup of melted Butter or Margarine
- 2 1/2 cups of Reduced Fat Cheez-It Crackers (crushed)
- 2/3 cup of shredded sharp cheddar cheese
- 1 cup flour
Steps:
- Pre-heat the oven to 375 degrees.
- Place Cheez-It Crackers and cheese into a ziplock bag, and roll over with a rolling pin until it is crushed into small pieces. Shake the bag until the crumbs and cheese are mixed.
- Place flour into a bowl, set aside.
- Place 2 eggs into a separate bowl and beat; set aside.
- Place cheez-it crumb mixture into a separate bowl, and set aside.
- Dip each chicken breast into the flour, the eggs and then the cheez-it crumbs (in that order).
- Set cheez-it covered chicken onto a lightly greased baking dish.
- Evenly distribute the melted butter over each chicken breast.
- Bake for 40 minutes.
