This recipe makes either 8 mini pies, or one whole pie.
- 2 3/4 Cup of Whole Wheat Pastry Flour (and some extra for dusting).
- 1/2 Cup of Olive Oil
- 3/4 Cup of Milk (any type of milk should work. I used soy milk!)
- 1 Tsp of Salt
- 2 Fresh Peaches, chopped into small pieces (if making a full sized pie, use 3 instead)
- 2 Tsp White Sugar
- Lil' Pie Maker Set (for mini pies)
Steps:
- Pre-heat the oven to 350 degrees.
- Grease the pie pans with spray-on olive oil (or any other non-stick cooking spray) and then lightly dust with extra flour.
- In a large bowl, combine 2 3/4 cups of whole wheat pastry flour and 1tsp of salt.
- In a separate bowl, mix the milk and the olive oil together, and then pour into the flour. Mix until the dough is firm.
- Place extra flour spread out on a clean flat surface (such as a counter top). Place dough in the center.
- With a rolling pin, flatten out the dough until it is about 1/4-1/8 of an inch thin.
- Using the Lil' Pie Maker crust cutters, cut out four circular crusts, and then place them into the Lil' Pie Maker pan.
- Fill each pie crust with the peach pieces, and then sprinkle 1/4 tsp of sugar onto the peaches.
- Using the Lil' Pie Maker latisse crust cuter, cut out four circular latisse crusts, and place on top of the peach layer.
- Sprinkle the top of the mini-pies with 1/4 tsp for each pie.
- Bake for 20-25 Minutes.
- If using Lil' Pie Maker, repeat steps 2 and 7-11 for the second batch.
