Parmesan Sausage Stuffed Pepper


What you'll need:
  • 1 cup of uncooked brown rice
  • 4 large green bell peppers
  • 2/3 large onion, diced
  • 3 tsp olive oil, separated (1 tsp and 2 tsp)
  •  8 oz turkey sweet italian sausage 
  • 1/2 tsp dried oregano
  • 1/2 cup grated parmesan cheese
  • Shredded Mozzarella for topping (1/2-1 cups depending on preference)
Steps:
  1. Cook rice according to package, set aside
  2. Pre-heat oven to 375 degrees 
  3. Hollow out the bell peppers and place into a lightly greased pan. Save the insides of the peppers, remove the seeds, and dice the remains. 
  4. Heat 2 tsp of olive oil in a large skillet, and sautee the diced green peppers and onions until it begins to brown. DO NOT BROWN. Set aside in a bowl, and add the remaining tsp of olive oil.
  5. In the skillet, brown the sausage until fully cooked and ground. Drain.
  6. Add the peppers and dried oregano to the sausage, and mix. Let it sit for two minutes. 
  7. Add rice and parmesan to the sausage, and mix. Season with salt and pepper.
  8. Stuff each pepper with meat, and then bake for 30 minutes.
  9. Remove from oven, top each pepper with mozzarella, and return to oven for 10-12 minutes (or until cheese melts).
