What you'll need:
- 1 cup of uncooked brown rice
- 4 large green bell peppers
- 2/3 large onion, diced
- 3 tsp olive oil, separated (1 tsp and 2 tsp)
- 8 oz turkey sweet italian sausage
- 1/2 tsp dried oregano
- 1/2 cup grated parmesan cheese
- Shredded Mozzarella for topping (1/2-1 cups depending on preference)
Steps:
- Cook rice according to package, set aside
- Pre-heat oven to 375 degrees
- Hollow out the bell peppers and place into a lightly greased pan. Save the insides of the peppers, remove the seeds, and dice the remains.
- Heat 2 tsp of olive oil in a large skillet, and sautee the diced green peppers and onions until it begins to brown. DO NOT BROWN. Set aside in a bowl, and add the remaining tsp of olive oil.
- In the skillet, brown the sausage until fully cooked and ground. Drain.
- Add the peppers and dried oregano to the sausage, and mix. Let it sit for two minutes.
- Add rice and parmesan to the sausage, and mix. Season with salt and pepper.
- Stuff each pepper with meat, and then bake for 30 minutes.
- Remove from oven, top each pepper with mozzarella, and return to oven for 10-12 minutes (or until cheese melts).
