Vegetarian Zucchini Casserole

What You'll Need:
  • 4 medium zucchinis chopped
  • 1/2 onion chopped
  • 1 1/2 cups grated carrots
  • 1 cup cheddar cheese + some extra to sprinkle the top
  • 1 box of savory herby stuffing mix
  • 1/2 cup melted butter
  • 1 can of cream of mushroom (if not vegetarian, use cream of chicken) 
  • 2/3 cup sour cream 
  • Salt and pepper 
Steps: 
  1. Pre-heat the oven to 350
  2. In a LARGE bowl, mix together the zucchini, onions and carrots
  3. Add the stuffing mix (leave about 1/4 cup left over), butter and cheese
  4. Add the cream of mushroom and sour cream
  5. Sprinkle with salt and pepper and then mix well
  6. Spoon mixture into a small casserole dish 
  7. Sprinkle remaining crumbs of stuffing mix 
  8. Sprinkle with cheese
  9. Bake for 1 hour (or until bubbling at the edges and golden at the top)
