- 4 medium zucchinis chopped
- 1/2 onion chopped
- 1 1/2 cups grated carrots
- 1 cup cheddar cheese + some extra to sprinkle the top
- 1 box of savory herby stuffing mix
- 1/2 cup melted butter
- 1 can of cream of mushroom (if not vegetarian, use cream of chicken)
- 2/3 cup sour cream
- Salt and pepper
Steps:
- Pre-heat the oven to 350
- In a LARGE bowl, mix together the zucchini, onions and carrots
- Add the stuffing mix (leave about 1/4 cup left over), butter and cheese
- Add the cream of mushroom and sour cream
- Sprinkle with salt and pepper and then mix well
- Spoon mixture into a small casserole dish
- Sprinkle remaining crumbs of stuffing mix
- Sprinkle with cheese
- Bake for 1 hour (or until bubbling at the edges and golden at the top)
